We had a party at our house over the weekend with some fruit salad leftover. It was so good and the juices from the various fruits were plentiful and so delicious. I wanted to be sure and use it all.
I had some family over for dinner tonight and we had the leftover fruit for dessert. I bought a frozen pound cake at the grocery, not having time or inclination to bake one myself today. We sliced the cake thinly and put fruit on top of that with a dollop of vanilla ice cream. I also had some sauce for the fruit for those who preferred it to ice cream, or for those who wanted both. The sauce is so good that I am tempted to drink it with a straw. Here is the recipe.
ORANGE CHIFFON FRUIT SAUCE
6 oz. frozen orange juice concentrate
3 oz. cream cheese
1/2 c. evaporated milk
Put all in a blender and whirr to mix well. Refrigerate until ready to serve over fruit. It will thicken up in the frig.
